Description

A no-bake orange creamsicle pie bars recipe with creamy vanilla cheesecake, citrus gelatin, and a buttery Nilla Wafer crust—perfect for summer.


Ingredients

1⅓ cups Nilla Wafer cookie crumbs
5 tbsp unsalted butter, melted
3 oz orange gelatin
¾ cup boiling water
¾ cup cold water
8 oz cream cheese (x2)
¼ cup powdered sugar
1 cup confectioners’ sugar
1 tsp vanilla extract
2 tsp orange extract
8 drops orange food coloring (optional)
3 cups Cool Whip (divided)


Instructions

Line an 8×8 pan with parchment. Press crust mixture into base and freeze.
Make gelatin with ¾ cup hot + cold water, then chill.
Blend cream cheese, orange extract, sugar, and gelatin. Chill.
Beat second cream cheese with sugar and vanilla. Fold in Cool Whip.
Assemble layers, refrigerate overnight, and slice before serving.

Notes

  • Use the amounts of water in this recipe required to mix the orange gelatin. DO NOT use the amounts listed in the box instructions. We want a more stable gelatin and less of it.
  • If Orange Cream mixture is left in refrigerator for more than one hour, the gelatin will harden and form. This isn’t an issue unless you want a completely creamy layer for the top with NO orange gelatin specks. I think it’s a matter of personal preference and won’t affect the taste. It does look nice both ways, and will be delicious regardless, so don’t fret if there are chunks you hadn’t expected.
