Description

These vegan cranberry lemon bars are vibrant, zesty, and 100% plant-based with a tart cranberry layer and a smooth lemon top on a crisp vegan crust.


Ingredients

“1 (12 oz) bag cranberries”,
“3/4 cup sugar”,
“3 tbsp water”,
“Zest of 2 lemons”,
“1 1/2 cups all-purpose flour”,
“1/3 cup sugar”,
“3/4 cup vegan butter”,
“1 tsp vanilla extract”,
“1 cup sugar”,
“1/4 cup flour”,
“1/8 tsp salt”,
“3 tbsp cornstarch or 6 tbsp aquafaba”,
“1/2 cup lemon juice”


Instructions

Cook cranberries with sugar, zest, and water until jammy. Cool.
Mix crust ingredients, press into pan, and bake 17–20 min.
Spread cranberry jam over crust.
Mix lemon layer ingredients and pour on top.
Bake 18–22 min. Cool, chill 2 hours. Slice and serve.
