Ingredients
  

  • 2 cups graham cracker crumbs
  • ½ cup 1 stick unsalted butter, melted
  • ½ teaspoon salt
  • 2 3 oz packages lemon Jello
  • 1 cup boiling water
  • 3 8 oz packages cream cheese, softened
  • 1 ½ cups powdered sugar
  • 2 cups heavy whipping cream chilled
  • Zest and juice from 1 lemon
  • Optional toppings: whipped cream berries, lemon zest

Method
 

  1. Grease 9x9-inch dish. Combine crumbs, butter, salt, and press into pan. Chill.
  2. Dissolve lemon Jello in boiling water. Cool to room temp.
  3. Beat cream cheese and sugar. Add cooled Jello, cream, zest, and juice.
  4. Beat until thick. Pour over crust and chill 4+ hours.
