Ingredients
  

  • 1 12 oz bag cranberries
  • ¾ cup sugar
  • 3 tbsp water
  • Zest of 2 lemons
  • 1 ½ cups all-purpose flour
  • cup sugar
  • ¾ cup vegan butter
  • 1 tsp vanilla extract
  • 1 cup sugar
  • ¼ cup flour
  • tsp salt
  • 3 tbsp cornstarch or 6 tbsp aquafaba
  • ½ cup lemon juice

Method
 

  1. Cook cranberries with sugar, zest, and water until jammy. Cool.
  2. Mix crust ingredients, press into pan, and bake 17-20 min.
  3. Spread cranberry jam over crust.
  4. Mix lemon layer ingredients and pour on top.
  5. Bake 18-22 min. Cool, chill 2 hours. Slice and serve.
